Pistachio milk is a relatively new form of plant-based milk and only has one producer: Táche. It was first discovered by Vogue, “behind the bar at Ralph’s Coffee on the Upper East Side, on the tables of Maman in the West Village, and the shelves of Foxtrots (aka the Midwest Erewhon) in Chicago and Dallas.” This new dairy alternative was created by Roxana Saidi, founder of Táche, who is half-Persian. She was inspired by pistachios because she had snacked and enjoyed them her whole life considering Iran is the second-largest pistachio producer.

According to Vogue, at the beginning of the plant-based milk kingdom, there was only soy. Reliable enough, soy milk is a solid choice; however, it lacks the flavor other plant-based milk can offer. Among the many options, there is soy, almond, coconut, oat, and now pistachio. Coconut milk, to be frank, doesn’t perform too well in coffee and is best utilized for cooking. Pistachio milk uses significantly less water than almond milk and has fewer calories, sugars, and oils than oat milk. Basically, pistachio milk offers everything the other plant-based milks can’t offer. Táche reports that within six weeks of being on the market, the company overperformed by 300 percent.

The social media responses regarding the new dairy alternative have been extremely positive. Táche’s website describes their milk as: “A little bit nutty and a little bit sweet, Táche is a vegan plant-based milk made with real pistachios. Made without any added oils, our pistachio milk is light on calories and carbs yet, big on flavor. With exceptional frothing abilities, Táche was designed specifically to complement warm beverages like coffee and matcha. It’s so delicious; we won’t tell anyone if you drink straight from the carton.”
